  • 1012 garlic scape stalks, trimmed and roughly chopped
  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed (or 1.5 cups cooked chickpeas)
  • 1/4 cup (60 ml) tahini, well-stirred
  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons olive oil, plus extra for drizzling
  • 34 tablespoons water, to thin as needed
  • 1 teaspoon ground cumin (optional)
  • 3/4 teaspoon salt, adjust to taste
  • Reserved charred garlic scapes from roasting
  • A handful of fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat your oven broiler or set a grill pan over medium-high heat. Arrange the trimmed garlic scapes on a baking sheet or directly in the pan.
  2. Char the garlic scapes by roasting under the broiler for 5-7 minutes, turning once, until they develop dark spots and soften. Remove and let cool slightly.
  3. In a food processor, combine the drained chickpeas, tahini, lemon juice, olive oil, ground cumin, and salt.
  4. Add the charred garlic scapes to the processor, reserving about 2 tablespoons for garnish. Blend until smooth, scraping down the sides as needed, about 2-3 minutes.
  5. Add water a tablespoon at a time to reach a creamy, spreadable texture.
  6. Taste and adjust seasoning with more salt, lemon juice, or cumin if desired. Optionally, sprinkle smoked paprika on top.
  7. Transfer hummus to a serving bowl. Drizzle with olive oil and scatter reserved charred scapes and chopped parsley on top.
  8. Serve immediately or chill for 20 minutes. Pairs well with pita chips, fresh veggies, or as a sandwich spread.

Notes

Watch garlic scapes carefully while charring to avoid burning. Use fresh lemon juice for best flavor. If hummus tastes bitter, add a pinch of baking soda while blending. Leftovers thicken in fridge; stir in water or olive oil before serving.
