  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese (about 8 oz)
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon or yellow mustard
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the bacon in a large pot over medium heat until crisp, about 6-8 minutes. Remove bacon bits with a slotted spoon to a paper towel-lined plate, leaving about 1 tablespoon of bacon fat in the pot.
  2. Add ground beef to the pot with the bacon fat. Break it apart and cook until no longer pink, about 7 minutes. Drain excess fat if necessary. Season lightly with salt and pepper.
  3. Add chopped onion to the pot and cook until translucent, about 4 minutes. Stir in minced garlic and cook for another minute until fragrant.
  4. Stir in diced potatoes, chicken broth, tomato paste, Worcestershire sauce, and mustard. Bring to a boil, then reduce heat to low and simmer, covered, for 15-20 minutes or until potatoes are tender.
  5. Optional: Use an immersion blender to partially puree the soup, leaving some potato chunks for texture. Alternatively, puree half the soup in a blender and return to the pot.
  6. Reduce heat to low and stir in heavy cream and shredded cheddar cheese. Stir gently until cheese melts smoothly. Avoid boiling to prevent cheese separation.
  7. Taste and adjust seasoning with salt and pepper. Thin soup with a splash of broth or water if too thick.
