  • 2 large boneless, skinless chicken breasts
  • 1 block (8 oz) cream cheese, softened
  • 1 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup creamy ranch dressing
  • 1/4 cup blue cheese crumbles (optional)

Instructions

  1. If chicken breasts are thick, cut them in half horizontally to ensure even cooking. Place chicken in the bottom of a slow cooker.
  2. Pour the buffalo sauce over the chicken. Place the block of cream cheese on top. If using, sprinkle blue cheese crumbles over the cream cheese.
  3. Cover and cook on LOW for 2 to 3 hours, until the chicken is tender and cooked through.
  4. Remove chicken from the pot and shred it into bite-sized pieces using two forks. Discard any fat or gristle.
  5. Return shredded chicken to the slow cooker. Stir in the ranch dressing until the chicken is fully coated.
  6. Sprinkle shredded mozzarella cheese over the top. Cover and cook on HIGH for 15 to 20 minutes until the cheese is melted and the dip is smooth.
  7. Stir gently before serving. If too thick, add a splash of chicken broth or milk; if too thin, cook longer with lid off.

Notes

Use room temperature cream cheese to ensure smooth melting without lumps. Do not use whipped cream cheese. For a milder version, mix buffalo sauce with barbecue sauce or use less hot sauce. For extra heat, add cayenne pepper or jalapeños. This dip is naturally gluten-free if using certified gluten-free sauces.
