  • 3 large russet potatoes, peeled and diced into ½-inch cubes
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup low-sodium beef broth
  • ½ cup heavy cream
  • 1 cup whole milk
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried parsley
  • ½ teaspoon dried thyme
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon garlic powder

Instructions

  1. Peel and dice potatoes into ½-inch cubes. Place in cold water to rinse off excess starch, then drain and set aside.
  2. Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Brown thoroughly for 8-10 minutes.
  3. Drain excess fat from the beef, leaving about 1 tablespoon. Stir in diced onions and minced garlic. Cook for 2-3 minutes until onions are translucent.
  4. In a medium bowl, whisk together heavy cream, milk, beef broth, flour, dried parsley, thyme, garlic powder, salt, and black pepper until smooth.
  5. Add the drained potatoes, browned beef mixture, and liquid sauce to a 6-quart slow cooker. Stir to combine.
  6. Cover and cook on low for 6-7 hours, until potatoes are tender.
  7. Stir in the shredded cheddar cheese. Cover and cook on high for 15-20 minutes, or until cheese is melted and sauce is thickened.
  8. Taste and adjust seasoning if needed. Serve hot.

Notes

Do not use pre-shredded cheese as it contains anti-caking agents that prevent smooth melting. Browning the beef beforehand adds significant flavor depth. If the sauce is too thin, mix 1 tablespoon cornstarch with 1 tablespoon cold water and stir into the pot, cooking on high for 10 minutes. Potatoes should be soaked in cold water to remove excess starch and prevent mushiness.
