A comforting, deconstructed lasagna soup made in a slow cooker. This easy weeknight dinner features tender pasta, rich tomato broth, and creamy cheese, capturing the nostalgic flavors of traditional lasagna with minimal effort.

  • 1 lb ground beef (80/20 preferred)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp olive oil
  • 2 cans (28 oz each) crushed tomatoes
  • 4 cups beef broth (low-sodium)
  • 2 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and black pepper to taste
  • 1 cup small pasta shells or elbow macaroni
  • 1 cup ricotta cheese (whole milk)
  • 2 cups mozzarella cheese, shredded
  • 2 tbsp fresh basil, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 3 minutes until softened.
  2. Add minced garlic and cook for 30 seconds, being careful not to burn it.
  3. Add ground beef and break it up with a spoon. Cook for 5-7 minutes until no longer pink. Drain excess grease if necessary.
  4. Transfer the meat and onion mixture to a 6-quart slow cooker.
  5. Add crushed tomatoes, tomato paste, beef broth, dried oregano, dried basil, salt, and pepper. Stir until tomato paste is dissolved.
  6. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  7. About 30 minutes before serving, add dry pasta to the slow cooker. Stir to submerge and cook on high for 30 minutes, stirring occasionally.
  8. In a small bowl, mix ricotta cheese with a spoonful of hot soup to loosen it. Stir the ricotta mixture back into the slow cooker.
  9. Sprinkle shredded mozzarella on top. Cover and let sit for 5 minutes until cheese is melted.
  10. Ladle into bowls, garnish with fresh basil, and serve immediately.

Notes

Do not add pasta at the beginning of cooking as it will become mushy. Shred cheese yourself to ensure smooth melting; pre-shredded cheese contains anti-caking agents. If the soup is too thin, use a cornstarch slurry in the last 15 minutes. For a vegetarian version, omit beef and add mushrooms or spinach. For gluten-free, use GF pasta but monitor cooking time closely.
