Instructions

  1. Cook the bacon: In a large skillet over medium heat, cook the chopped bacon until crispy, about 6-8 minutes. Use a slotted spoon to transfer half the bacon to a paper towel-lined plate for garnish. Leave the remaining bacon and rendered fat in the skillet.
  2. Sauté the aromatics: Add the diced onion to the skillet with the bacon and fat. Cook over medium heat until soft and translucent, about 4 minutes. Add the minced garlic and cook for 30 seconds more until fragrant.
  3. Transfer to the slow cooker: Pour the bacon-onion-garlic mixture into a 6-quart slow cooker. Add the diced russet potatoes, chicken broth, salt, and pepper. Stir to combine.
  4. Cook on low for 6-7 hours or high for 3-4 hours, until the potatoes are fork-tender.
  5. Add the dairy: Stir in the cubed cream cheese, shredded cheddar, milk, and sour cream. Stir gently until the cream cheese is fully melted and the soup is smooth and creamy, about 2-3 minutes.
