  • 1/2 cup chicken broth (low sodium)
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Fresh basil leaves, roughly chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides generously with salt, pepper, and smoked paprika.
  2. Heat 2 tablespoons of olive oil over medium-high heat in a large skillet. Add chicken breasts and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove chicken from pan and set aside.
  3. Reduce heat to medium. In the same pan, add minced garlic and chopped shallots. Stir frequently and cook for about 2 minutes until fragrant and translucent, but not browned. Scrape up any browned bits from the chicken for added flavor.
  4. Add chopped sun-dried tomatoes and stir for 1 minute to release their oils and flavor.
  5. Pour in chicken broth and bring to a gentle simmer. Let it reduce slightly for 3-4 minutes.
  6. Stir in the heavy cream and sprinkle in Italian seasoning. Allow the sauce to simmer gently for 5 minutes, stirring occasionally, until it thickens to a creamy consistency.
  7. Add grated Parmesan cheese and stir until melted and fully incorporated. Taste and adjust seasoning with salt, pepper, or red pepper flakes if desired.
  8. Return the cooked chicken breasts to the pan and spoon sauce over the top. Let everything warm together for 2-3 minutes so flavors meld.
  9. Sprinkle fresh chopped basil over the dish just before serving.

If sauce gets too thick, stir in a splash more chicken broth or cream to loosen it. Pat chicken dry before seasoning to ensure a good crust. Use medium-high heat for searing to avoid burning. Add Parmesan cheese last to avoid clumping. For dairy-free, substitute heavy cream with coconut cream and Parmesan with vegan cheese or nutritional yeast.
