  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • ½ cup (120g) 100% pure pumpkin puree
  • 1 teaspoon vanilla extract
  • 1½ teaspoons pumpkin pie spice
  • ¼ teaspoon salt
  • Optional Topping: ½ cup lightly sweetened whipped cream
  • Optional Topping: 2 tablespoons mini chocolate chips
  • Optional Topping: 1 teaspoon orange zest

Instructions

  1. Preheat oven to 325°F (165°C). Line a 24-cup mini muffin tin with paper liners or grease lightly.
  2. In a large mixing bowl, beat the softened cream cheese and sugar together on medium speed until completely smooth and creamy. Scrape down the sides of the bowl.
  3. Add the eggs one at a time, mixing on low speed just until incorporated. Do not overmix.
  4. Add the pumpkin puree, vanilla extract, pumpkin pie spice, and salt. Gently fold these ingredients into the batter with a spatula until just combined and uniform in color.
  5. Spoon or pipe the batter into the prepared muffin cups, filling each about ¾ full. Tap the tin gently on the counter to release air bubbles.
  6. Bake for 20-25 minutes until the edges are set but the centers still have a slight jiggle.
  7. Remove from the oven and let cool in the tin on a wire rack for 15 minutes.
  8. Transfer to the counter and let cool completely to room temperature.
  9. Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set.
  10. Top with whipped cream, chocolate chips, or orange zest before serving.

Ensure all ingredients are at room temperature to prevent lumps and cracking. Do not overmix the batter after adding eggs, as this incorporates air which can cause cracks. The centers should remain slightly jiggly when removed from the oven; they will firm up as they chill. These can be stored in the refrigerator for up to 5 days or frozen for up to 2 months.
