  • 1 teaspoon sugar or honey
  • 2 cloves garlic, minced (optional)
  • 2 large eggs, room temperature
  • Optional toppings: chopped scallions or chives, toasted sesame seeds, thinly sliced nori sheets, shichimi togarashi

Instructions

  1. Prepare the soft boiled eggs: Bring a medium pot of water to a gentle boil. Carefully lower the eggs into the water using a slotted spoon. Boil for exactly 6 minutes for that perfect jammy yolk. Immediately transfer eggs to an ice bath to stop cooking. Let cool for 5 minutes, then gently peel.
  2. Cook the noodles: In the same pot, bring fresh water to a boil again. Add the noodles and cook according to package instructions—usually 3-4 minutes for fresh ramen, 5-6 minutes for dried. Stir occasionally to prevent sticking. Drain and rinse under cold water to halt cooking and remove excess starch.
  3. Make the miso butter sauce: While noodles cook, melt the butter in a small skillet over low heat. Add minced garlic (if using) and sauté gently until fragrant, about 1 minute—don’t let it brown. Stir in miso paste, soy sauce, toasted sesame oil, and sugar/honey. Mix thoroughly until smooth and slightly thickened, about 1-2 minutes. Remove from heat.
  4. Toss noodles with sauce: Return noodles to the pot or a large bowl. Pour the warm miso butter sauce over the noodles. Using tongs or chopsticks, toss gently but thoroughly to coat every strand. Heat slightly on low if needed, but avoid overheating or the sauce might separate.
  5. Assemble the bowl: Divide noodles between two bowls. Peel the soft boiled eggs and slice in half lengthwise. Place one half on top of each bowl, yolk side up. Sprinkle with chopped scallions, toasted sesame seeds, and nori strips. Add a pinch of shichimi togarashi if you like a little kick.

Notes

Peel soft boiled eggs under running cold water to help. Adjust soy sauce if miso paste is very salty. Add a splash of hot water to sauce if too thick. Use ice bath immediately after boiling eggs to stop cooking. Rinse noodles under cold water to keep them springy. Avoid overheating sauce to prevent separation.
