  • 2 tablespoons granulated sugar
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1 ½ cups heavy whipping cream, cold
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • Optional: 1 tablespoon lemon zest

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until mixture resembles wet sand. Press firmly into the bottom and about 1 inch up the sides of a 9-inch pie dish. Chill in the fridge for at least 15 minutes.
  2. Make the cream cheese filling: Beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy, about 2-3 minutes with an electric mixer.
  3. Whip the cream: In a separate chilled bowl, whip cold heavy cream until stiff peaks form, about 3-5 minutes on medium-high speed.
  4. Combine filling and whipped cream: Gently fold whipped cream into the cream cheese mixture in thirds using a spatula, keeping it light and airy.
  5. Assemble the pie: Pour the filling into the chilled crust and smooth the top.
  6. Arrange the berries: Create a rectangle of blueberries in the upper left corner of the pie, then make horizontal rows of sliced strawberries across the rest of the pie. Optionally sprinkle lemon zest over the top.
  7. Chill to set: Cover loosely with plastic wrap and refrigerate for at least 4 hours or overnight.
