  • 2 medium carrots, diced into small rounds
  • 2 stalks celery, finely chopped
  • 1 medium yellow onion, diced
  • 1 cup frozen peas
  • 1 cup all-purpose flour (for dumplings)
  • 1 teaspoon baking powder
  • 1/2 cup whole milk
  • 2 tablespoons butter, melted (for dumplings)
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste

Instructions

  1. Pat chicken cubes dry and season generously with salt and pepper.
  2. In a large pot, melt 4 tablespoons of butter over medium heat. Add diced onion and celery; cook for 3-4 minutes until softened.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Add chicken pieces to the pot and cook for 5-6 minutes until mostly white on the outside.
  5. Stir in diced carrots and pour in chicken broth, scraping up browned bits from the bottom. Bring to a gentle simmer.
  6. Whisk 1/4 cup flour with a splash of hot broth to make a smooth paste, then pour back into the pot. Simmer for 2 minutes to cook out raw flour taste.
  7. Stir in heavy cream and simmer for 2 minutes until the sauce thickens slightly.
  8. In a small bowl, whisk together 1 cup flour, baking powder, dried thyme, and a pinch of salt. Stir in melted butter and milk until a soft, slightly sticky dough forms.
  9. Drop spoonfuls of dough directly into the simmering sauce, spacing them out. Do not stir.
  10. Cover with a tight-fitting lid, reduce heat to low, and steam for 15 minutes without lifting the lid.
  11. Remove lid, check that dumplings are cooked through (toothpick test), and stir in frozen peas. Let sit for 2 minutes before serving.

Notes

Do not overmix the dumpling dough to avoid tough dumplings. Keep the lid on while steaming to trap heat. If the sauce is too thin, simmer longer or use a cornstarch slurry. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use olive oil and coconut milk.
