  • 12 ounces fettuccine or linguine pasta (can substitute penne or rotini)
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 4 cups chicken or vegetable broth (low-sodium preferred)
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese (about 100 grams)
  • Salt and black pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Melt the butter in a large deep skillet or wide pot over medium heat. Add the minced garlic and cook gently for 3-4 minutes until fragrant and golden but not browned.
  2. Pour in 4 cups of chicken or vegetable broth and bring to a gentle simmer.
  3. Add the dry pasta all at once, pressing it down to submerge as much as possible. Stir every couple of minutes and cook uncovered for 8-10 minutes until pasta is al dente and has absorbed most of the broth.
  4. Reduce heat to low and stir in 1 cup heavy cream. Warm through for about 2 minutes until the sauce starts to thicken.
  5. Remove from heat and gradually stir in 1 cup freshly grated parmesan cheese until melted and smooth. Add a splash of broth or cream if the sauce is too thick.
  6. Season with salt and black pepper to taste. Garnish with chopped fresh parsley before serving.

Notes

Cook garlic gently to avoid bitterness. Stir pasta frequently to prevent sticking. Add broth or cream to loosen sauce if it thickens too much. Use fresh grated parmesan for best melt and texture. For dairy-free, substitute heavy cream with coconut cream and parmesan with nutritional yeast. For gluten-free, use gluten-free pasta and adjust cooking time accordingly.
