A quick and easy one-pot Tuscan chicken recipe featuring tender chicken breasts in a creamy, garlicky sauce with sun dried tomatoes and spinach. Perfect for cozy weeknight dinners with minimal cleanup.

  • 4 boneless, skinless chicken breasts (medium size)
  • 2 tablespoons olive oil
  • 3 large garlic cloves, minced
  • 1/3 cup sun dried tomatoes, chopped (packed in oil preferred)
  • 3 cups fresh baby spinach
  • 1 cup heavy cream (or half-and-half for lighter option)
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme mix)
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil leaves, chopped

Instructions

  1. Mince garlic, chop sun dried tomatoes and fresh basil. Pat chicken breasts dry and season both sides with salt, pepper, and half the dried Italian herbs.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering (about 1-2 minutes).
  3. Add chicken breasts in a single layer and sear undisturbed for 5-6 minutes until golden brown. Flip and cook the other side for 4-5 minutes. Remove chicken and tent with foil to keep warm.
  4. Lower heat to medium, add minced garlic and chopped sun dried tomatoes to the skillet. Stir constantly for about 1 minute until fragrant.
  5. Pour in chicken broth and scrape up browned bits from the pan.
  6. Add heavy cream and grated Parmesan cheese. Stir gently until cheese melts and sauce thickens slightly (3-4 minutes). Season with salt, pepper, remaining dried herbs, and optional red pepper flakes.
  7. Return chicken breasts to skillet, nestle into sauce, cover with lid, reduce heat to low, and simmer gently for 8-10 minutes until chicken reaches 165°F (74°C). Avoid boiling.
  8. Stir in fresh baby spinach and chopped basil leaves. Cook uncovered for 1-2 minutes until spinach wilts but remains vibrant.
  9. Serve chicken with sauce, garnished with extra Parmesan or fresh basil if desired.

Notes

Pat chicken dry before searing to get a golden crust. Keep heat moderate when sautéing garlic to avoid burning. If sauce thickens too much, add more chicken broth or cream to loosen. Rest chicken a few minutes before serving to keep it juicy. Use freshly grated Parmesan for best melting. Cover pan while simmering to cook chicken evenly and keep moist. Stir in spinach at the end to keep it bright and fresh.
