A quick, 5-minute no-cook breakfast recipe featuring rolled oats, natural peanut butter, and ripe bananas soaked overnight for a creamy, pudding-like consistency.

  • 1/2 cup Old-Fashioned Rolled Oats
  • 2 tablespoons Natural Peanut Butter
  • 1 medium Ripe Banana
  • 3/4 cup Milk of Choice (dairy, almond, oat, or soy)
  • 1 teaspoon Chia Seeds
  • 1 teaspoon Honey or Maple Syrup (optional)
  • 1/4 teaspoon Cinnamon
  • A pinch of Salt

Instructions

  1. Peel the banana and mash half of it thoroughly in the bottom of a mason jar or glass container using the back of a spoon. Slice the other half into rounds for topping.
  2. Add the rolled oats, chia seeds, cinnamon, and a pinch of salt to the jar with the mashed banana. Stir slightly to distribute the chia seeds evenly.
  3. Pour in the milk. If using natural peanut butter, stir the jar first to mix the oil, then scoop two tablespoons of peanut butter into the jar.
  4. Add honey or maple syrup if desired for extra sweetness.
  5. Mix thoroughly with a spoon or small whisk until the peanut butter is completely broken up and the mixture looks uniform and creamy.
  6. Top with the sliced banana rounds if desired, then seal the jar with its lid.
  7. Refrigerate for at least 4 hours, but overnight (8-12 hours) is best to allow the oats to soften and absorb the liquid.
  8. In the morning, give the oats a good stir. Add a splash of milk if too thick. Serve cold or warm in the microwave for 30 seconds.

Notes

Use old-fashioned rolled oats, not quick oats or steel-cut, for the best texture. Ensure you mix the peanut butter thoroughly to avoid clumps. Bananas may brown overnight; add slices right before eating for best presentation. The oats keep well in the fridge for up to 5 days.
