These creamy peanut butter banana overnight oats are a 5-minute prep breakfast that delivers a thick, pudding-like texture. Made with simple ingredients, they’re perfect for busy mornings and taste like a cozy hug in a bowl.

  • 1 cup rolled oats (not instant or steel-cut)
  • 1 cup milk (any kind works — dairy, almond, oat, or coconut milk)
  • 2 tablespoons creamy peanut butter (natural or regular)
  • 1 medium ripe banana (the spotty ones are best)
  • 1 tablespoon maple syrup or honey (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Mash the banana: Peel your ripe banana and put it in the bottom of your jar or container. Use a fork to mash it until it’s mostly smooth with a few small chunks left.
  2. Add the peanut butter: Spoon in 2 tablespoons of creamy peanut butter right on top of the mashed banana. Don’t mix yet.
  3. Pour in the milk: Add 1 cup of your chosen milk. If you’re using maple syrup or honey, add it now along with the vanilla extract and pinch of salt.
  4. Whisk it together: Use your fork or a small whisk to stir everything together until the peanut butter is mostly incorporated and the banana is dispersed.
  5. Add the oats: Pour in 1 cup of rolled oats and stir until they’re completely coated in the liquid mixture. Every oat should be wet.
  6. Seal and refrigerate: Put the lid on your container and place it in the fridge. Let it sit for at least 6 hours, but overnight is best (8-12 hours).
  7. Enjoy in the morning: Take your oats out of the fridge. Give them a good stir. If too thick, add a splash of milk. Top with sliced banana, a drizzle of extra peanut butter, or anything else you like, and eat cold or at room temperature.

Notes

Use rolled oats for best texture. Mash banana thoroughly for creaminess. Ripe bananas with brown spots add more sweetness. Oats keep in fridge for up to 5 days. Can be frozen for up to 3 months. For warm oats, microwave 45-60 seconds.
