A quick, no-crust pecan pie cobbler that combines a rich, creamy pecan filling with a sweet, biscuit-like topping. It comes together in under 30 minutes and is perfect for busy weeknights or last-minute guests.

Ingredients

Scale
  • 2 cups pecan halves
  • 1/2 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  2. Optional: Toast pecans in the oven for 5 minutes, then let cool slightly.
  3. In a medium bowl, whisk together melted butter, brown sugar, granulated sugar, eggs, heavy cream, vanilla, and salt until smooth and frothy.
  4. Pour toasted pecans into the wet mixture and stir to coat evenly. Pour into the prepared baking dish.
  5. In a separate small bowl, whisk together flour, baking powder, and cinnamon.
  6. Sprinkle the dry mixture evenly over the pecan filling. Do not stir.
  7. Bake for 25-30 minutes until the topping is golden brown and the filling is bubbling around the edges.
  8. Cool for at least 10 minutes to allow the filling to set before serving warm with vanilla ice cream.

Notes

For a gluten-free version, use a 1:1 gluten-free flour blend. For a dairy-free version, substitute butter with coconut oil and heavy cream with coconut cream. Ensure eggs are at room temperature to prevent the butter from seizing. Let the cobbler cool for 10 minutes before serving to allow the custard-like filling to set.
