  • ¼ tsp ground nutmeg
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine 1 cup rolled oats, 1 tbsp chia seeds, 1 tsp ground cinnamon, ¼ tsp ground nutmeg, and a pinch of salt. Stir to distribute spices evenly.
  2. In a separate bowl or large measuring jug, whisk together ½ cup vanilla Greek yogurt, ¾ cup unsweetened almond milk, ½ cup pumpkin puree, 1 scoop vanilla protein powder, and 1-2 tbsp maple syrup until smooth and fully incorporated.

  4. Divide the mixture evenly into two 16-ounce mason jars or similar airtight containers.
  5. Seal the jars tightly and refrigerate for at least 6 hours, ideally 8-10 hours, to allow the oats and chia seeds to soak and thicken.
