Instructions

  2. Prepare the Chai Base: Warm 1 cup whole milk and ¼ cup heavy cream over medium-low heat in another saucepan. Heat until steam rises and tiny bubbles form around edges (3-4 minutes), do not boil.
  3. Add Pumpkin and Spices: Whisk in 3 tablespoons canned pumpkin puree until smooth. Add ½ teaspoon cinnamon, ¼ teaspoon ground ginger, ⅛ teaspoon cardamom, a pinch of nutmeg, and a tiny pinch of salt. Whisk gently to blend evenly until creamy and slightly thickened.
  4. Steep the Chai Tea: Place 1 chai tea bag into the warm milk mixture. Steep for 5 minutes, stirring occasionally. Remove tea bag carefully. Optionally strain through a fine mesh sieve for smoother texture.
  5. Sweeten and Adjust: Stir in 2-3 tablespoons brown sugar syrup, tasting as you go. Add more syrup if desired for sweetness. The syrup should melt giving a glossy caramel sheen.
  6. Serve: Pour into a mug and top with whipped cream, a sprinkle of cinnamon, or toasted pumpkin seeds if desired.
