  • 4 tablespoons unsalted butter
  • 15–20 fresh sage leaves
  • 1 (15 oz) can 100% pure pumpkin puree
  • 1/2 cup heavy cream
  • 1 package (16-17 oz) gnocchi (shelf-stable or refrigerated)
  • 2 cloves garlic, minced
  • 1/2 cup freshly grated parmesan cheese
  • 1 pinch nutmeg
  • Salt and black pepper to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Wash and pat dry the sage leaves. If large, tear them in half.
  2. Fill a large pot with salted water and bring to a rolling boil.
  3. In a large skillet, melt butter over medium heat. Watch closely until it turns golden amber and smells nutty (2-3 minutes). Remove from heat immediately.
  4. Turn heat back to medium-high. Add sage leaves to the hot butter and fry for 30-60 seconds until crisp. Remove with a slotted spoon to a paper towel.
  5. In the same skillet with the brown butter, sauté minced garlic for 30 seconds until fragrant.
  6. Reduce heat to low. Stir in pumpkin puree and cook for 1 minute. Pour in heavy cream and whisk until smooth. Add nutmeg, salt, and pepper. Simmer gently for 2 minutes.
  7. Drop gnocchi into boiling water. Cook until they float (2-4 minutes). Reserve 1/2 cup pasta water before draining.
  8. Add drained gnocchi to the skillet with the sauce. Toss to coat, adding reserved pasta water if needed to thin the sauce.
  9. Remove from heat. Stir in parmesan cheese until melted. Top with crispy sage leaves and serve immediately.

Notes

Ensure sage leaves are completely dry before frying to prevent splattering. Do not use pumpkin pie filling; use 100% pure pumpkin. Brown butter burns quickly, so have ingredients prepped (mise en place) before starting. If the sauce splits, add a splash of cold water and whisk vigorously.
