  • 1 cup (240ml) milk of choice (e.g., unsweetened almond milk)
  • ½ cup (120g) pumpkin puree
  • ¼ cup (60g) Greek yogurt
  • 2 tablespoons (20g) chia seeds
  • 1½ teaspoons pumpkin pie spice
  • 2 tablespoons (30ml) maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: chopped pecans, pumpkin seeds, nut butter, whipped cream, extra pumpkin pie spice

Instructions

  1. In a medium bowl or Mason jar, whisk together the rolled oats, chia seeds, pumpkin pie spice, and salt.
  2. In a separate small bowl or measuring cup, whisk together the milk, pumpkin puree, Greek yogurt, maple syrup, and vanilla extract until fully combined.
  3. Pour the wet ingredients into the dry ingredients and stir until completely combined.
  4. Divide the mixture evenly among four 8-ounce jars, leaving about ½ inch of headspace.
  5. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk; if too thin, let sit longer or add more chia seeds.
  7. Add desired toppings and serve cold or warm (microwave for 45-60 seconds without lid).

Notes

Stir the oats halfway through soaking (2-3 hours) to redistribute chia seeds. Use room temperature ingredients for better absorption. The oats keep for up to 5 days in the fridge. Do not freeze.
