  • 2 tablespoons maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • Pinch of salt

  • 1 cup pecan halves (120g)
  • 1 tablespoon maple syrup
  • Pinch of salt

Instructions

  1. Toast the maple pecans: Heat a small skillet over medium heat. Add pecan halves, drizzle with 1 tablespoon maple syrup, and sprinkle a pinch of salt. Stir frequently, letting the syrup caramelize and coat the pecans evenly for about 5-7 minutes. Watch closely to prevent burning. Transfer pecans to a parchment-lined plate to cool.
  2. Mix dry ingredients: In a mixing bowl, combine 1 cup rolled oats, 1 tablespoon chia seeds, 1 teaspoon pumpkin pie spice, and a pinch of salt. Stir to distribute spices evenly.
  3. Combine wet ingredients: In a separate bowl, whisk together ½ cup pumpkin puree, 1 cup almond milk, ½ cup Greek yogurt, 2 tablespoons maple syrup, and 1 teaspoon vanilla extract until smooth and creamy with no lumps.
  4. Combine wet and dry: Pour the wet mixture into the dry ingredients. Stir gently but thoroughly until every oat is coated and the mixture looks thick and creamy.
  5. Portion into containers: Divide the mixture evenly among two or three mason jars or containers, leaving a little space at the top for expansion.
  6. Refrigerate overnight (minimum 6 hours): Cover and place in the refrigerator to allow oats to absorb liquid and soften while chia seeds thicken the mixture.
  7. Serve: Before eating, give the oats a gentle stir. Top with a generous handful of the cooled maple pecans. Optionally, add extra maple syrup or a splash of milk.

Notes

Use old-fashioned rolled oats for best texture; certified gluten-free oats for gluten-free diet. Toast pecans carefully on medium-low heat to avoid burning maple syrup. Adjust pumpkin puree or maple syrup to taste. If oats are too thick in the morning, add a splash of almond milk to loosen. Maple pecans should be stored separately to maintain crunch.
