  • 1/2 teaspoon pumpkin pie spice (optional)
  • 1/2 cup heavy cream
  • 2 tablespoons pure grade B maple syrup
  • 4–5 fresh sage leaves, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Cut acorn squashes in half lengthwise, scoop out seeds, brush cut sides with olive oil, and season with salt and pepper. Place cut-side down on a roasting pan and roast for 40-45 minutes until tender.
  2. While squash roasts, melt butter in a large soup pot over medium heat. Add diced onion and cook for 5-7 minutes until soft. Add minced garlic and cook for 1 minute until fragrant.
  3. Remove squash from oven and let cool slightly. Scoop flesh out of skin and add to the pot with onions. Pour in vegetable broth and add pumpkin pie spice if using. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Use an immersion blender to puree the soup until completely smooth. If using a countertop blender, blend in batches carefully.
  5. Stir in heavy cream and maple syrup. Heat gently for 2-3 minutes without boiling. Taste and adjust seasoning.
  6. Ladle into bowls, drizzle with extra maple syrup, sprinkle with chopped sage, and serve immediately with crusty bread.

Notes

Roasting concentrates the sugars and adds a smoky character compared to boiling. Ensure the squash is fully tender before blending to avoid a gritty texture. For a dairy-free version, swap butter and cream for olive oil and full-fat coconut milk. Save and roast the seeds for a crunchy topping.
