A velvety, comforting soup made by roasting butternut squash to concentrate its natural sweetness, then blending it with aromatics, broth, and cream or coconut milk for a rich, fall-inspired meal.

  • 2 medium butternut squash, peeled and cubed into 1-inch pieces
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth (low-sodium)
  • 1/2 cup heavy cream or full-fat coconut milk
  • 2 tablespoons olive oil (divided)
  • 1 tablespoon pure maple syrup
  • 1/4 teaspoon nutmeg (freshly grated)
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Peel the butternut squash (microwave for 2 minutes to soften if needed), remove seeds, and cube into 1-inch pieces.
  2. Toss squash cubes with 1 tablespoon olive oil, salt, and pepper. Spread in a single layer on a roasting pan and roast for 25-30 minutes until tender and browned.
  3. While squash roasts, heat remaining 1 tablespoon olive oil in a large stockpot over medium heat. Sauté onion until translucent (3-4 minutes), then add garlic and cook for 30 seconds until fragrant.
  4. Add roasted squash to the pot with vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 10 minutes.
  5. Remove from heat and let cool slightly. Puree the soup using an immersion blender or countertop blender until smooth.
  6. Stir in cream (or coconut milk), maple syrup, and nutmeg. Season with salt and pepper to taste. Warm gently over low heat without boiling.

Notes

For deeper flavor, add a bay leaf while simmering and remove before blending. If using a countertop blender, blend in batches and leave the vent lid open to allow steam to escape. The soup thickens in the fridge; add broth when reheating. It freezes well for up to 3 months.
