A rich and comforting slow cooker chicken recipe featuring cream cheese, ranch seasoning, cheddar, and bacon for an indulgent yet easy weeknight dinner.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 1 packet (or 1 tablespoon) ranch seasoning mix
  • 6 slices cooked bacon, crumbled
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: chopped green onions or fresh parsley for garnish

Instructions

  1. Cook bacon until crispy (about 15 minutes at 400°F in the oven), then crumble and set aside.
  2. In a medium bowl, combine softened cream cheese, ranch seasoning, garlic powder, onion powder, salt, and pepper. Stir until smooth.
  3. Place chicken breasts in the slow cooker in a single layer. Cut thick pieces in half horizontally if needed for even cooking.
  4. Spread the cream cheese mixture evenly over the chicken breasts.
  5. Cover and cook on low for 5 to 6 hours or on high for 2.5 to 3 hours until chicken reaches 165°F and is tender.
  6. Shred the chicken in the slow cooker using two forks and stir to mix with the sauce.
  7. Sprinkle shredded cheddar cheese and crumbled bacon on top, cover, and cook on low for another 10-15 minutes until cheese melts.
  8. Garnish with chopped green onions or parsley and serve warm.

Notes

If sauce is too thick, stir in a splash of chicken broth or milk to loosen. Avoid overcooking chicken to prevent dryness. Use dairy-free cream cheese and cheese for lactose-free version. Bacon can be substituted with pancetta or turkey bacon. Serve over cauliflower rice or steamed veggies for low-carb option.
