Creamy Slow Cooker White Chicken Chili

A rich, comforting, and easy-to-make white chicken chili that uses cream cheese for a velvety texture. This slow cooker recipe requires minimal prep time and delivers a flavorful, crowd-pleasing meal perfect for weeknights.

  • 2 large boneless, skinless chicken breasts
  • 1 medium yellow onion, diced
  • 3 cloves fresh garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt (plus more to taste)
  • 0.5 teaspoon black pepper
  • 1 (32-ounce) carton low-sodium chicken broth
  • 1 (4-ounce) can diced green chiles, undrained
  • 1 (15-ounce) can Great Northern or cannellini beans, rinsed and drained
  • 1 (8-ounce) block full-fat cream cheese, cut into cubes
  • Sliced avocado, fresh cilantro, and lime juice for serving

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker insert.
  2. Sprinkle the diced onion, minced garlic, cumin, oregano, salt, and black pepper over the chicken. Toss gently to coat.
  3. Pour the chicken broth over the chicken and spices. Add the can of green chiles with their juice.
  4. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken reaches 165°F and shreds easily.
  5. Remove chicken from the pot and shred into bite-sized pieces using two forks.
  6. Return shredded chicken to the slow cooker and add the drained white beans. Stir to combine.
  7. Cook on HIGH for an additional 15-20 minutes to heat the beans through.
  8. Add the cubed cream cheese to the hot chili and stir continuously until completely melted and incorporated.
  9. Taste and adjust seasoning with additional salt or pepper if needed.
  10. Serve hot, topped with sliced avocado, fresh cilantro, and a squeeze of lime juice.

Notes

For a thicker chili, mash some beans against the side of the pot before adding cream cheese. If using frozen chicken, increase cooking time by 1-2 hours. Light cream cheese may separate; use full-fat for best texture. This recipe freezes well but may require vigorous stirring upon reheating to restore creaminess.
