  • ½ cup small-curd full-fat cottage cheese (120g)
  • ½ cup plain Greek yogurt (120g)
  • ¾ cup milk (dairy or plant-based) (180ml)
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced (150g)
  • ½ cup graham cracker crumble (60g) made from crushed graham crackers, melted butter, and brown sugar
  • 2 tablespoons unsalted butter (for graham crumble)
  • 2 tablespoons brown sugar (for graham crumble)
  • ¾ cup graham crackers (90g) for crumble

Instructions

  1. Prepare the Graham Crumble (10 minutes): Crush ¾ cup (90g) of graham crackers into coarse crumbs using a rolling pin or food processor.
  2. In a small pan over medium heat, melt 2 tablespoons (30g) unsalted butter and stir in 2 tablespoons (25g) brown sugar until dissolved.
  3. Add the graham cracker crumbs and toast, stirring frequently, for about 4-5 minutes until golden and fragrant. Remove from heat and let cool completely.
  4. Mix the Base (5 minutes): In a mixing bowl, combine 1 cup (90g) rolled oats, ½ cup (120g) cottage cheese, ½ cup (120g) Greek yogurt, and ¾ cup (180ml) milk.
  5. Add 2 tablespoons honey (or maple syrup) and 1 teaspoon vanilla extract.
  6. Whisk until smooth and creamy, making sure there are no lumps of cottage cheese.
  7. Assemble and Add Fruit (2 minutes): Gently fold in 1 cup (150g) sliced strawberries, reserving a few for topping.
  8. Portion the mixture into 2-3 mason jars or containers.
  9. Refrigerate Overnight (Minimum 6 hours): Cover and place jars in the fridge to soak overnight.
  10. Serve with Crunchy Graham Crumble: Just before eating, sprinkle the cooled graham crumble on top for that satisfying crunch.
  11. Add extra fresh strawberries or a drizzle of honey if desired.

Notes

If cottage cheese feels too chunky, blend it briefly before mixing. Adjust milk quantity for preferred consistency. Toast graham crumble carefully to avoid burning. Add graham crumble just before serving to keep it crunchy. Can be made dairy-free by substituting coconut yogurt and plant-based milk.
