Creamy Whipped Feta Crostini Recipe with Roasted Tomatoes and Basil

A quick and easy appetizer featuring whipped feta cheese spread topped with sweet roasted cherry tomatoes and fresh basil on toasted baguette slices. Perfect for entertaining and last-minute guests.

  • 8 ounces (225g) feta cheese, preferably Greek feta in brine
  • 4 ounces (115g) cream cheese, softened
  • 2 tablespoons (30ml) olive oil, plus extra for drizzling
  • 2 cloves garlic, minced
  • 1 pint (about 300g) cherry tomatoes, halved
  • A handful of fresh basil leaves, roughly chopped
  • 1 tablespoon (15ml) freshly squeezed lemon juice
  • Salt to taste
  • Freshly ground black pepper to taste
  • 1 loaf baguette or rustic bread, sliced into 1/2-inch (1.25cm) thick pieces

Instructions

  1. Preheat oven to 400°F (200°C). Toss halved cherry tomatoes with 1 tablespoon olive oil, a pinch of salt, and freshly ground black pepper. Spread cut-side up on a baking sheet and roast for 20-25 minutes until soft, caramelized, and slightly wrinkled.
  2. While tomatoes roast, drain feta cheese well to avoid watery spread. In a food processor, combine feta, softened cream cheese, minced garlic, 2 tablespoons olive oil, and lemon juice. Pulse until smooth and fluffy, scraping down sides as needed.
  3. Slice baguette into 1/2-inch thick pieces. Brush lightly with olive oil on both sides. Toast slices on a grill pan or in the oven at 375°F (190°C) for 5-7 minutes, flipping halfway, until golden and crisp.
  4. Spread a generous layer of whipped feta onto each toasted bread slice. Top with a spoonful of warm roasted tomatoes. Scatter chopped fresh basil leaves over the top, drizzle lightly with olive oil, and add a crack of black pepper.
  5. Serve crostini fresh and slightly warm. If making ahead, keep whipped feta and roasted tomatoes separate and assemble just before serving to keep bread crisp.
