  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs / 700g)
  • 3 tablespoons white miso paste
  • 1 tablespoon soy sauce (low sodium if preferred)
  • 1 tablespoon mirin
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon freshly grated ginger
  • 3 large scallions, thinly sliced (white and green parts separated)
  • 2 tablespoons vegetable oil
  • 1 teaspoon honey (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Pat the chicken thighs dry with paper towels to ensure crispy skin (about 2 minutes).
  2. In a medium bowl, combine white miso paste, soy sauce, mirin, sesame oil, minced garlic, grated ginger, and honey if using. Mix until smooth (about 2 minutes).
  3. Add the chicken thighs skin side up to the marinade. Coat evenly, cover, and refrigerate for at least 20 minutes, ideally up to 1 hour.
  4. While the chicken marinates, heat vegetable oil in a small saucepan over medium-low heat. Add the white parts of the scallions and cook gently for 3-4 minutes until softened and fragrant. Remove from heat and let cool.
  5. Preheat the air fryer to 400°F (200°C) for 3 minutes.
  6. Place the chicken thighs skin side down in the air fryer basket. Cook for 10 minutes.
  7. Flip the chicken carefully using tongs and cook skin side up for an additional 8-10 minutes until the internal temperature reaches 165°F (74°C) and the skin is golden-brown and crispy.
  8. Remove the chicken from the air fryer and let rest for 5 minutes.
  9. Drizzle scallion oil over the chicken, sprinkle with the green parts of the scallions, and add freshly ground black pepper to taste.

Patting the chicken dry before marinating is crucial for crispy skin. Preheat the air fryer to help sear the skin immediately. Flip the chicken carefully to avoid tearing the skin. Scallion oil can be made ahead and stored in the fridge. For gluten-free, substitute soy sauce with tamari and verify mirin ingredients. If skin isn’t crispy enough, air fry for an additional 2-3 minutes skin side up. Avoid overcrowding the air fryer basket; cook in batches if needed.
