An easy and quick recipe for juicy, tender pork chops with a crispy parmesan crust made in the air fryer. Perfect for busy weeknights or impressing guests with minimal effort.

Ingredients

Scale
  • 4 bone-in or boneless pork chops, about 1-inch thick
  • ¾ cup finely grated Parmesan cheese (preferably Parmigiano-Reggiano)
  • ½ cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme)
  • Salt and black pepper to taste
  • 2 large eggs, beaten
  • Olive oil spray (extra virgin recommended)
  • Lemon wedges (optional, for serving)

Instructions

  1. Pat the pork chops dry with paper towels to remove excess moisture. Season both sides lightly with salt and pepper. (5 minutes)
  2. In a shallow bowl, combine Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, and dried Italian herbs. Mix well. (3 minutes)
  3. In a separate bowl, beat the eggs until smooth. (2 minutes)
  4. Dip each pork chop into the egg wash, letting any excess drip off, then press firmly into the breadcrumb mixture, coating both sides evenly. For extra crunch, repeat the egg and breadcrumb step once more. (10 minutes)
  5. Preheat the air fryer to 400°F (200°C) and let it heat for about 3 minutes. (3 minutes)
  6. Place pork chops in the air fryer basket in a single layer without overlapping. Lightly spray the tops with olive oil spray. (2 minutes)
  7. Air fry for 12-15 minutes, flipping halfway through. Pork chops should reach an internal temperature of 145°F (63°C). The crust will be golden and crispy, and the meat juicy. (15 minutes)
  8. Let the chops rest on a plate for 5 minutes after cooking to allow juices to redistribute. (5 minutes)
  9. Serve with lemon wedges if desired. Enjoy immediately for best texture.

Notes

Pat pork chops dry before coating to ensure crispiness. Use olive oil spray to help crust brown evenly without deep frying. Use a meat thermometer to avoid overcooking; target 145°F (63°C). For extra crunch, double dip in egg and breadcrumb mixture. Let chops rest after cooking to keep juices locked in. Cook in batches if air fryer basket is small to avoid overcrowding. For gluten-free, substitute panko with almond flour or gluten-free breadcrumbs. For dairy-free, substitute parmesan with nutritional yeast. Add smoked paprika or cayenne for a spicy kick.
