Crispy Air Fryer Salmon Bites with Lemon Aioli

These crispy air fryer salmon bites are golden and shatteringly crisp on the outside, tender and flaky within, and paired with a bright, garlicky lemon aioli. Ready in under 20 minutes, they’re perfect for busy weeknights or as a crowd-pleasing appetizer.

  • 1 ½ pounds salmon fillet, skin removed and cut into 1-inch cubes
  • 2 tablespoons olive oil (or avocado oil)
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • Optional pinch of cayenne pepper
  • ½ cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 small garlic clove, minced or grated
  • 1 tablespoon chopped fresh parsley (optional)
  • Salt and pepper to taste

Instructions

  1. Prep the salmon: Pat the salmon fillet dry with paper towels. Remove the skin if attached, then cut into 1-inch cubes. Try to make them as uniform as possible.
  2. Season the salmon: In a medium bowl, whisk together olive oil, paprika, garlic powder, onion powder, salt, pepper, and cayenne if using. Add salmon cubes and gently toss until evenly coated. Let sit for 5-10 minutes at room temperature.
  3. Preheat the air fryer: Set air fryer to 400°F (200°C) and preheat for 3-5 minutes.
  4. Arrange the salmon bites: Lightly brush or spray the air fryer basket with oil. Arrange salmon cubes in a single layer, making sure they’re not touching. Cook in batches if needed.
  5. Cook the salmon: Air fry at 400°F for 8-10 minutes, flipping halfway through with tongs. Check at 8 minutes; salmon should be golden brown and flake easily with a fork.
  6. Make the lemon aioli: In a small bowl, combine mayonnaise, fresh lemon juice, lemon zest, minced garlic, and chopped parsley. Stir until smooth. Season with salt and pepper to taste. Cover and refrigerate until ready to serve.
  7. Serve immediately: Transfer crispy salmon bites to a serving platter. Serve hot with lemon aioli on the side for dipping. Garnish with additional fresh parsley or lemon wedges if desired.

Notes

Pat the salmon very dry before seasoning to ensure crispiness. Don’t crowd the air fryer basket; cook in batches if needed. For extra crispiness, increase temperature to 425°F for the last minute. Leftover salmon bites can be reheated in the air fryer at 350°F for 3-4 minutes.
