  • 12 medium fresh jalapeño peppers, washed and halved lengthwise
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • 12 slices thin-cut bacon
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  2. Wearing gloves, slice each jalapeño in half lengthwise. Use a spoon to scoop out the seeds and membranes. Set the halves aside.
  3. In a medium bowl, combine the softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until smooth and evenly blended.
  4. Spoon the cheese mixture generously into each jalapeño half, pressing slightly to fill any gaps.
  5. Take one slice of bacon and wrap it around each filled jalapeño half, securing the ends underneath or with a toothpick if needed.
  6. Place the wrapped poppers seam-side down on the baking sheet, spaced about 1 inch apart.
  7. Bake for 20-25 minutes until the bacon is golden and crispy and the cheese filling bubbles slightly.
  8. Remove from oven and let rest for 5 minutes to allow the cheese to set.
  9. Sprinkle with chopped fresh cilantro if desired and serve warm.

Wear gloves when handling jalapeños to avoid irritation. Use thin-cut bacon for best crispiness. Let poppers rest after baking to prevent hot cheese burns. For extra crispiness, broil for last 2-3 minutes watching carefully. Do not overcrowd the pan to avoid steaming.
