Ingredients

Scale
  • 3 ripe bananas, mashed
  • 1 ½ cups all-purpose flour (or almond flour for gluten-free option)
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs, room temperature
  • ½ cup cottage cheese (small-curd)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • 3 large eggs (for French toast batter)
  • 1 cup whole milk (or dairy-free alternative like oat milk)
  • 1 teaspoon vanilla extract (for French toast batter)
  • ½ teaspoon ground cinnamon (for French toast batter)
  • Pinch of salt (for French toast batter)
  • ½ cup unsalted butter, softened (for maple pecan butter)
  • ¼ cup pure maple syrup
  • ⅓ cup chopped pecans, toasted
  • Pinch of salt (for maple pecan butter)
  • Fresh banana slices (optional, for serving)
  • Powdered sugar (for dusting)
  • Extra maple syrup (optional, for serving)

Instructions

  1. Preheat oven to 350°F (175°C). In a large bowl, cream together ½ cup softened unsalted butter, granulated sugar, and brown sugar until light and fluffy (3-4 minutes).
  2. Add 2 eggs one at a time, beating well after each addition. Stir in 1 teaspoon vanilla extract.
  3. Mix mashed bananas and ½ cup cottage cheese into the wet mixture until just blended.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon. Gradually fold dry ingredients into wet ingredients until just combined.
  5. Pour batter into a prepared 9×5-inch loaf pan and smooth the top. Bake for 55-60 minutes or until a toothpick inserted in the center comes out clean. Cool completely before slicing.
  6. Toast pecans in a dry skillet over medium heat for 3-5 minutes until fragrant. In a small bowl, beat ½ cup softened butter with ¼ cup maple syrup and a pinch of salt until fluffy. Fold in toasted pecans. Refrigerate until ready to use.
  7. Slice cooled banana bread into ¾-inch thick pieces.
  8. In a shallow bowl, whisk together 3 eggs, 1 cup milk, 1 teaspoon vanilla extract, ½ teaspoon cinnamon, and a pinch of salt for the French toast batter.
  9. Dip each banana bread slice into the batter, soaking about 20 seconds per side without becoming soggy.
  10. Heat a skillet or griddle over medium heat and add a small pat of butter or oil. Cook soaked bread slices for 3-4 minutes per side until golden brown and crispy.
  11. Serve warm with a generous dollop of maple pecan butter, extra maple syrup, banana slices, and a dusting of powdered sugar.
