  • 1 cup Whole Milk
  • 1.5 cups Sharp Cheddar Cheese, freshly grated
  • 1/2 cup Lager Beer
  • 1 teaspoon Dijon Mustard
  • 1/2 teaspoon Garlic Powder
  • 1/4 teaspoon Smoked Paprika
  • Coarse Sea Salt (for topping)
  • Melted Butter (optional, for brushing)

Instructions

  1. Activate the yeast: In a large bowl, combine warm water and sugar. Sprinkle yeast on top and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add melted butter and salt to the yeast mixture. Gradually add flour, mixing until the dough pulls away from the sides. Knead for 5-7 minutes until slightly tacky but not sticky.
  3. First rise: Place dough in a greased bowl, cover, and let rise in a warm spot for 45 minutes to 1 hour, or until doubled in size.
  4. Prepare beer cheese sauce: While dough rises, melt butter in a saucepan. Whisk in flour to make a roux. Slowly whisk in milk and beer until thickened. Remove from heat and stir in cheddar, mustard, garlic powder, and paprika until smooth.
  5. Shape pretzel bites: Preheat oven to 425°F (220°C). Punch down dough and divide into four ropes. Cut ropes into 1-inch pieces and place on parchment-lined baking sheets. Let rest for 10 minutes.
  6. Boil pretzels: Bring 8 cups of water to a boil and stir in baking soda. Boil pretzel bites in batches for 30 seconds per side. Remove with a slotted spoon and return to baking sheets.
  7. Bake: Sprinkle boiled pretzels with coarse sea salt. Bake for 12-15 minutes until deep golden brown. Brush with melted butter if desired and serve immediately with warm beer cheese.
  8. Serve: Enjoy hot pretzel bites with the warm beer cheese dip.

Notes

Ensure water temperature is around 110°F to activate yeast without killing it. Do not skip the baking soda boil as it creates the authentic pretzel flavor and crust. Use freshly grated cheese for the smoothest dip. The dip can be made ahead and stored in the fridge for up to 3 days.
