  • 1 pound breakfast sausage (pork, turkey, or chicken)
  • 2 tablespoons butter
  • 8 large eggs
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1.5 cups sharp cheddar cheese, shredded
  • 3 stalks green onions, sliced
  • Freshly cracked black pepper
  • Salt to taste

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13 inch baking dish.
  2. Cook breakfast sausage in a large skillet over medium heat until browned and no longer pink (8-10 minutes). Drain excess grease and set aside.
  3. In the same skillet, melt butter and add frozen hash browns. Cook over medium-high heat for 10-12 minutes until golden brown and crispy.
  4. Spread the crispy hash browns into the prepared baking dish. Sprinkle half of the cheddar cheese over the potatoes, then scatter the cooked sausage evenly on top.
  5. In a large bowl, whisk together eggs, heavy cream, Dijon mustard, Worcestershire sauce, black pepper, and salt until smooth and frothy.
  6. Pour the egg mixture over the potato and sausage layers. Press down gently to submerge potatoes slightly. Sprinkle remaining cheddar cheese on top.
  7. Bake for 35-40 minutes until eggs are set and the top is golden brown with bubbly cheese. Cover loosely with foil if browning too quickly.
  8. Remove from oven and let rest for 10 minutes before slicing. Garnish with sliced green onions and serve warm.

Notes

For best results, crisp the hash browns in the skillet before baking to prevent sogginess. Shred cheese from a block rather than using pre-shredded cheese for better melting. If making ahead, assemble the night before and refrigerate; add 10-15 minutes to baking time if cooking from cold. Let the casserole rest for 10 minutes after baking to allow the custard to set.
