These crispy buffalo cauliflower bites are a quick and easy vegetarian snack that’s perfect for game day. Coated in a tangy-spicy buffalo sauce with a crunchy panko crust, they’re a crowd-pleaser that even meat-eaters will love.

  • 1 large head of cauliflower, cut into bite-sized florets (about 45 cups)
  • 1 cup all-purpose flour (or gluten-free all-purpose blend)
  • 1 cup milk (whole milk works best, but any milk—including almond or oat—will do)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup panko breadcrumbs
  • ½ cup Frank’s RedHot Original hot sauce
  • ¼ cup unsalted butter, melted (or vegan butter for a dairy-free version)
  • 1 tablespoon honey or maple syrup (optional)
  • Ranch dressing or blue cheese dip (for serving)
  • Celery sticks and carrot sticks (for serving)
  • Fresh parsley or chives, chopped, for garnish

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone mat. If you have a wire rack, place it on top of the baking sheet.
  2. Cut the cauliflower into bite-sized florets, about the size of a golf ball.
  3. In a large bowl, whisk together the flour, milk, garlic powder, onion powder, smoked paprika, salt, and pepper until smooth and slightly thick.
  4. Place the panko breadcrumbs in a shallow bowl or plate.
  5. Working in batches, dip each floret into the batter, letting any excess drip off. Then roll it in the panko breadcrumbs, pressing gently so the crumbs stick. Place the coated florets on the prepared baking sheet, leaving space between each piece.
  6. Bake for 18-22 minutes, flipping halfway through, until the florets are golden brown and crispy.
  7. While the cauliflower bakes, combine the hot sauce and melted butter in a small saucepan over low heat. Whisk until smooth and warmed through. If using honey or maple syrup, stir it in now.
  8. Once the cauliflower is out of the oven, transfer it to a large bowl. Pour the buffalo sauce over the top and toss gently with tongs until every floret is coated.
  9. Serve immediately, garnished with fresh parsley or chives, with ranch or blue cheese dip alongside celery and carrot sticks.

Notes

For extra crispiness, use a wire rack on the baking sheet. Let the batter rest for 5 minutes before coating. Serve immediately for best texture. Leftovers can be reheated in an air fryer or oven.
