These crispy, cheesy bacon-wrapped jalapeño poppers are the ultimate party appetizer. With a perfectly crispy bacon exterior, a gooey cream cheese and cheddar filling, and a customizable heat level, they disappear fast at any gathering.

  • 1216 medium fresh jalapeño peppers
  • 1 lb standard cut bacon
  • 8 oz cream cheese, softened
  • 4 oz sharp cheddar cheese, shredded
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Optional: Ranch or blue cheese dip for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack inside a rimmed baking sheet.
  2. Wearing disposable gloves, rinse and dry the jalapeños. Slice each pepper in half lengthwise. Use a small spoon or melon baller to scrape out the seeds and white membranes. For milder poppers, remove all pith; for more heat, leave some in.
  3. In a small mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, smoked paprika, and a pinch of black pepper. Mix until smooth and well-combined.
  4. Generously fill each jalapeño half with the cheese mixture, keeping the filling level with the cut edge of the pepper. Smooth the top with the back of a spoon.
  5. Cut each bacon slice in half crosswise. Wrap one half-slice of bacon snugly around the middle of each filled jalapeño half. Place the wrapped popper on the wire rack, seam-side down.
  6. Bake on the middle rack for 20-25 minutes, until the bacon is deeply golden brown and crispy and the cheese filling is bubbly and starting to brown in spots.
  7. Let the poppers rest on the wire rack for at least 5 minutes before serving. The filling is extremely hot.

Notes

For best results, use standard cut bacon, not thick-cut. Full-fat cream cheese is essential to prevent leaking. Assemble up to 24 hours in advance and refrigerate; add 5 minutes to baking time. Reheat in an air fryer at 350°F for 3-4 minutes. Freeze uncooked poppers for up to 3 months; bake from frozen at 400°F for 30-35 minutes.
