  • 2 medium zucchinis, grated
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or vegetable oil for frying
  • 1/2 cup sour cream (for dip)

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out as much moisture as possible.
  2. In a mixing bowl, combine the grated zucchini, shredded cheese, flour, egg, chopped onion, minced garlic, salt, and pepper. Mix well until combined.
  3. Heat the oil in a large skillet over medium heat.
  4. Scoop about 2 tablespoons of the zucchini mixture and form into small patties.
  5. Place the patties in the hot skillet and cook for 3-4 minutes on each side or until golden brown and crispy.
  6. Remove the fritters from the skillet and drain on paper towels.
  7. Serve warm with sour cream dip.
