  • 1/4 cup real maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Wash and dry the delicata squash. Do not peel.
  3. Cut off both ends of the squash and slice crosswise into 1/2-inch thick rings.
  4. Use a spoon to scoop out seeds and stringy bits from the center of the rings.
  5. In a small bowl, whisk together olive oil, melted butter, maple syrup, smoked paprika, garlic powder, onion powder, salt, and black pepper.
  6. Place squash rings in a large bowl or on lined baking sheets and drizzle with the glaze. Toss to coat evenly.
  7. Arrange rings in a single layer on baking sheets, ensuring they are not touching.
  8. Roast for 15 minutes, then flip each ring over.
  9. Roast for another 10-15 minutes until edges are golden brown and crispy.
  10. Let cool for 5 minutes before serving.

Notes

Ensure rings are spaced apart on the baking sheet to allow for air circulation and crispiness. Do not skip removing the seeds as they can burn and taste bitter. If using a dairy-free diet, substitute butter with extra olive oil or coconut oil.
