  • Mini cocktail sausages
  • 1 large egg (beaten, for egg wash)
  • Honey (raw or regular)
  • Dijon mustard

  • Smoked paprika (a pinch)
  • Apple cider vinegar (a splash)
  • Salt (to taste)
  • Freshly ground black pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. On a lightly floured surface, roll out the puff pastry sheet to smooth out any creases. Cut the pastry into strips about 1 inch wide and 4 inches long.
  3. Wrap each mini cocktail sausage with a strip of puff pastry, slightly overlapping the edge to seal.
  4. Beat the egg in a small bowl and brush each wrapped sausage generously with the egg wash.
  5. Place the wrapped sausages seam side down on the prepared baking sheet, leaving space between each.
  6. Bake for 15–20 minutes or until the pastry is puffed and golden brown, checking after 15 minutes to avoid burning.
  7. While baking, whisk together honey, Dijon mustard, whole-grain mustard, smoked paprika, apple cider vinegar, salt, and pepper in a small bowl to make the honey mustard sauce. Adjust sweetness or tang to taste.
  8. Serve the crispy pigs in blankets warm with the honey mustard sauce on the side for dipping.

Notes

Do not overwrap sausages with thick pastry to ensure crispiness. Brush egg wash evenly but avoid pooling to prevent burning. Use cold pastry straight from the fridge for better puff. For gluten-free, use gluten-free puff pastry or prosciutto wrapping. Sauce can be made a day ahead to deepen flavors. Reheat leftovers in a 350°F oven for 5-7 minutes to restore crispness.
