These crispy, cheesy, and dangerously addictive party snacks combine the complex heat of ghost peppers with melted Monterey Jack cheese in a quick, easy-to-make bite-sized format.

Ingredients

  • Small flour tortillas (about 6 inches)
  • Monterey Jack cheese (shredded)
  • Ghost pepper powder or finely diced fresh ghost peppers
  • Unsalted butter (melted)
  • Vegetable oil
  • Garlic powder
  • Salt
  • Fresh cilantro (optional, chopped)

Instructions

  1. In a small mixing bowl, combine shredded Monterey Jack cheese, ghost pepper powder, garlic powder, and a pinch of salt. Mix well and set aside.
  2. Lay a tortilla flat on a cutting board. Sprinkle a generous amount of the cheese mixture over half of the tortilla, leaving a small border around the edge.
  3. Fold the other half of the tortilla over the cheese to create a half-moon shape and press down gently to seal.
  4. Repeat with remaining tortillas to assemble all quesadillas.
  5. Place a non-stick skillet over medium heat and let it warm for about 2 minutes. Add vegetable oil and swirl to coat the bottom.
  6. Carefully place one quesadilla in the skillet. Brush the top side lightly with melted butter.
  7. Cook for 2-3 minutes until the bottom is golden brown and crispy.
  8. Flip the quesadilla using tongs. Brush the newly exposed side with butter.
  9. Cook for another 2-3 minutes until the second side is golden and the cheese is fully melted.
  10. Remove from skillet and place on a wire rack to cool for 1 minute.
  11. Cut the quesadilla into small triangles or squares (4-6 bites per quesadilla).
  12. Repeat with remaining quesadillas and serve warm.

Notes

Handle ghost peppers with gloves to avoid skin irritation. For a milder version, swap ghost pepper for jalapeño or omit entirely. To keep bites crispy, use a wire rack instead of a plate and reheat in an air fryer or toaster oven rather than a microwave.
