  • 1 cup Granulated White Sugar
  • ½ cup Unsalted Butter (softened)
  • 1 large Egg Yolk
  • 2 tablespoons Meringue Powder
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Almond Extract
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 3 to 4 cups Confectioners’ Sugar (for icing)
  • 3 tablespoons Meringue Powder (for icing)
  • ¼ cup Warm Water (for icing)
  • Gel Food Coloring (Black, Orange, Purple)

Instructions

  1. Cream softened butter and granulated sugar in a stand mixer on medium-high speed for 3-4 minutes until pale and fluffy.
  2. Add egg yolk, vanilla extract, and almond extract; mix on low until combined.
  3. Whisk together flour, baking powder, salt, and meringue powder in a separate bowl.
  4. Gradually add dry ingredients to wet mixture on low speed until a soft dough forms.
  5. Divide dough in half, flatten into disks, wrap in plastic, and refrigerate for at least 4 hours or overnight.
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Roll dough to 1/8 inch thickness on a floured surface and cut into shapes.
  8. Bake for 10-12 minutes until edges are barely golden; cool on sheet for 5 minutes, then transfer to wire rack.
  9. Whisk meringue powder and 2 tablespoons warm water until foamy, then beat in confectioners’ sugar until stiff peaks form.
  10. Divide icing, add gel food coloring, and pipe outlines first; let dry 15-20 minutes before flooding with other colors.
  11. Allow decorated cookies to dry completely for 4-6 hours or overnight.

Notes

Chill the dough for at least 4 hours to prevent spreading. Use gel food coloring instead of liquid to maintain icing consistency. Do not overbake; cookies continue to cook on the hot pan. Royal icing hates humidity; decorate on a dry day if possible.
