  • 1/4 cup extra virgin olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 3 tablespoons honey
  • 1 tablespoon soy sauce or tamari
  • Sea salt and black pepper, to taste
  • 1/4 cup fresh cilantro or parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Slice the delicata squash in half crosswise, scoop out seeds, and slice into 1/2-inch thick rings.
  2. Place squash rings in a large mixing bowl. Drizzle with olive oil and sprinkle with chili powder, smoked paprika, garlic powder, salt, and pepper. Toss until evenly coated.
  3. Arrange squash rings in a single layer on a parchment-lined baking sheet, ensuring they are not touching. Roast for 20 minutes, flipping halfway through, until tender and slightly browned.
  4. While squash roasts, whisk honey and soy sauce in a small bowl until smooth.
  5. Remove baking sheet from oven and brush or drizzle the honey mixture over the hot squash rings.
  6. Return to oven and roast for another 5-10 minutes until the glaze is bubbly, sticky, and deep amber in color.
  7. Let cool for 2 minutes to allow glaze to set, then garnish with fresh cilantro or parsley before serving.

Notes

Do not overcrowd the baking sheet to ensure crispiness. Salt the squash rings for 10 minutes before roasting to draw out excess moisture. Ensure the squash is hot when applying the honey glaze to help it stick and caramelize. For air fryer method: cook at 380°F for 12 minutes, shake basket, brush with glaze, and cook 3-4 more minutes.
