Instructions

  1. Wash and dry the zucchinis. Cut off the ends and slice each zucchini lengthwise into sticks about 3 inches long and 1/2 inch thick. Pat dry with paper towels to remove excess moisture.
  2. Set up three bowls: one with 1/2 cup flour, one with beaten eggs, and one with a mixture of 1 cup panko breadcrumbs, 1/2 cup grated Parmesan, 1 teaspoon garlic powder, 1 teaspoon Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  3. Dredge each zucchini stick in the flour, shaking off excess. Dip into the beaten eggs, letting extra drip off. Press into the panko-Parmesan mixture to coat evenly.
