  • 1 large egg, beaten
  • 1 teaspoon garlic powder

  • For the garlic herb yogurt dip:
  • 1 cup plain full-fat Greek yogurt
  • 1 small clove fresh garlic, minced
  • 2 tablespoons mixed fresh chopped parsley, dill, and chives
  • 1 teaspoon lemon juice
  • Pinch of salt

Instructions

  1. Grate the zucchinis using a box grater or food processor into a large bowl (about 3 cups grated).
  2. Transfer grated zucchini into a clean kitchen towel or cheesecloth and twist to squeeze out as much moisture as possible.
  3. In a large mixing bowl, combine the squeezed zucchini, Parmesan, flour, cornstarch, beaten egg, garlic powder, salt, and black pepper. Mix gently until just combined.
  4. Heat a non-stick or cast iron skillet over medium heat and add enough olive oil to coat the bottom (about 2 tablespoons). Wait until the oil shimmers but does not smoke.
  5. Scoop about 2 tablespoons of batter per fritter and flatten gently into rounds. Place in hot oil, leaving space between each fritter.
  6. Fry for 3-4 minutes on one side until golden brown and crispy, then flip and fry the other side for another 3 minutes. Adjust heat as needed to avoid burning. Work in batches if necessary.
  7. Transfer cooked fritters to a paper towel-lined plate to drain excess oil. Keep warm in a low oven if frying in batches.
  8. While fritters cook, prepare the garlic herb yogurt dip by mixing Greek yogurt, minced garlic, fresh herbs, lemon juice, and salt. Refrigerate until serving.
  9. Serve warm fritters with a generous dollop of garlic herb yogurt dip on the side.

Notes

Pressing the zucchini dry is crucial to avoid soggy fritters. Do not overcrowd the pan when frying to maintain oil temperature and crispiness. For extra crispiness, sprinkle a little parmesan on the fritters before frying. Batter can be refrigerated for up to an hour before frying. Baking alternative: bake at 425°F (220°C) for 20 minutes, flipping halfway.
