  • 2 medium zucchini (about 12 oz / 340 g), grated and well-drained
  • 1/2 cup (50 g) grated Parmesan cheese
  • 1/3 cup (40 g) all-purpose flour (can substitute with almond flour for gluten-free option)
  • 1 large egg, beaten
  • 2 garlic cloves, minced
  • 1/4 teaspoon salt
  • Freshly ground black pepper, to taste
  • 2 tablespoons olive oil, for frying
  • 1 cup (240 ml) plain Greek yogurt
  • 1 garlic clove, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh herbs (dill, parsley, or chives), finely chopped
  • Salt and pepper, to taste

Instructions

  1. Grate the zucchini using a box grater or food processor into a large mixing bowl.
  2. Transfer the grated zucchini to a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
  3. In a medium bowl, mix grated Parmesan, flour, salt, and freshly ground black pepper.
  4. Beat the egg lightly, then add the minced garlic and pour over the dry ingredients.
  5. Fold the squeezed zucchini into the mixture until evenly combined and moist but holding together.
  6. Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat until shimmering, about 3 minutes.
  7. Scoop about 2 tablespoons of batter per fritter and flatten into 2-3 inch patties. Place in the hot skillet with space between each.
  8. Fry fritters for 3-4 minutes per side until crisp and golden brown.
  9. Transfer cooked fritters to a paper towel-lined plate to drain excess oil.
  10. While fritters cook, combine Greek yogurt, minced garlic, lemon juice, fresh herbs, salt, and pepper in a small bowl and mix well.
  11. Serve warm fritters with garlic herb yogurt dip immediately.

Notes

Squeezing out zucchini moisture thoroughly is crucial to avoid soggy fritters. Use finely grated Parmesan for best crispness. Cook fritters over medium heat to prevent burning or greasiness. Leftovers reheat well in a toaster oven or air fryer. Baking is an alternative method but yields less crispy fritters.
