A quick and elegant 5-minute party snack featuring flaky, golden puff pastry filled with creamy brie cheese and tart cranberry sauce.

  • 1 sheet frozen puff pastry, thawed
  • 6–8 oz wheel of brie cheese, rind on
  • 1/2 cup cranberry sauce (whole-berry or jellied)
  • 2 tbsp unsalted butter, melted
  • Optional: 1/4 cup chopped pecans or walnuts, toasted
  • Optional: Fresh thyme leaves

Instructions

  1. Preheat oven to 400°F (200°C). Line two large baking sheets with parchment paper.
  2. Lightly flour a work surface and unfold the thawed puff pastry sheets. Roll out slightly if needed, then cut into 3×3 inch squares.
  3. Place squares on prepared baking sheets, leaving 1 inch of space between each.
  4. Place about 1 teaspoon of brie cheese in the center of each square, followed by a dollop (1/2 teaspoon) of cranberry sauce.
  5. If using, sprinkle with chopped nuts or thyme leaves.
  6. Brush the tops of the pastry squares lightly with melted butter.
  7. Bake for 12-15 minutes until puffed and golden brown.
  8. Cool on the pan for 5 minutes before serving to allow the cheese to set slightly.

Notes

Keep the pastry cold until baking to ensure proper puffing. Do not overfill the bites to prevent leaking. For best results, use high-quality puff pastry that stays frozen until use. If your oven runs hot or cold, adjust baking time accordingly.
