  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup cooked ground beef, seasoned with taco spices (optional)

  • 1 cup black beans, drained and rinsed (optional, for vegetarian)
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced jalapeños
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream or Greek yogurt (for serving)
  • 1/2 cup guacamole or sliced avocado (optional)
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Fresh lime wedges for squeezing over the top

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare your protein: toss ground beef or shredded chicken with chili powder, cumin, salt, and pepper. If using beans, rinse and drain well.
  3. Line your sheet pan with parchment paper.
  4. Spread the tortilla chips evenly across the pan in a single layer.
  5. Sprinkle the seasoned protein or beans evenly over the chips.
  6. Distribute the shredded cheddar and Monterey Jack cheeses over everything.
  7. Add sliced jalapeños and diced red onions on top.
  8. Place the sheet pan in the oven and bake for 10-12 minutes until cheese is bubbling and just starting to brown.
  9. Remove from oven and sprinkle diced tomatoes and chopped cilantro over the top.
  10. Add dollops of sour cream and guacamole right before serving. Squeeze fresh lime juice over the top if desired.
