Guacamole and mashed beans can be prepared up to 24 hours ahead and refrigerated. For vegan option, substitute sour cream with dairy-free yogurt and omit or replace cheese with vegan alternative. Serve with tortilla chips or fresh veggie sticks. Leftovers keep up to 2 days refrigerated.
