A forgiving and delicious apple crisp featuring a tender fruit filling and a crunchy, nutty oat pecan topping. This recipe balances tart and sweet flavors with simple pantry ingredients for a comforting dessert.

Ingredients

Scale
  • 6 large apples (about 2.5 lbs), peeled, cored, and sliced (mix of Granny Smith and Fuji)
  • 1/2 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 1 cup rolled oats (old-fashioned)
  • 1 cup all-purpose flour
  • 1/2 cup chopped pecans, toasted
  • 1 cup packed brown sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel, core, and slice apples into uniform 1/4 to 1/2 inch chunks.
  3. In a large bowl, combine sliced apples with granulated sugar, brown sugar, apple cider vinegar, cinnamon, nutmeg, vanilla, and melted butter. Toss to coat and let sit for 10-15 minutes to draw out juices.
  4. In a medium bowl, whisk together rolled oats, flour, toasted pecans, brown sugar, salt, and cinnamon.
  5. Add cold, cubed butter to the dry ingredients. Mix using fingers, a pastry cutter, or food processor until the mixture resembles coarse crumbs with pea-sized chunks.
  6. Transfer the rested apple mixture to a 9×13 inch baking dish and spread evenly.
  7. Sprinkle the crumble topping generously over the apples. Do not pack it down.
  8. Bake for 45-55 minutes until the topping is golden brown and juices are bubbling vigorously.
  9. If the topping browns too quickly, tent loosely with aluminum foil.
  10. Let cool for at least 15 minutes before serving to allow juices to thicken.

Notes

For best results, use a mix of tart (Granny Smith) and sweet (Fuji/Honeycrisp) apples. Toast pecans at 350°F for 5-7 minutes before adding to the crumble for enhanced flavor. Keep butter cold for a crunchy topping. Leftovers can be stored in the fridge for 4 days or frozen for 3 months.
