Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, beat 1 cup softened butter and 1 cup sugar together with a mixer on medium speed until fluffy, about 3-4 minutes.
  3. Add 1 large egg and 2 teaspoons vanilla extract; mix on low until combined, scraping the bowl as needed.
  4. In a separate bowl, whisk together 2 ½ cups all-purpose flour, ½ teaspoon baking powder, and ¼ teaspoon salt.
  5. Gradually add the flour mixture to the butter mixture, mixing on low until just combined. Avoid overmixing.
  6. Lightly grease a 9×13 inch baking pan. Press the dough evenly into the pan’s bottom, smoothing with hands or a spatula.
  7. Bake for 15-18 minutes, or until edges are golden and center looks set but not browned. Let cool completely on a wire rack.
  8. In a chilled bowl, beat 8 oz softened cream cheese until smooth. Add ½ cup powdered sugar and 1 teaspoon vanilla; beat until creamy.
  9. In a separate bowl, whip ½ cup heavy cream until stiff peaks form, then gently fold into cream cheese mixture.
  10. Spread the creamy topping evenly over the cooled crust.
  11. Arrange sliced fruit on top as desired.
  12. Refrigerate for at least 1 hour before serving to let flavors meld and topping set.
